This is how this unmistakable pecorino was born.

Our pecorino is placed in cotton bags to make it deform or in crates to keep the initial shape and then sunken. A peculiarity is that of digging several times during the anus, because “it is not the pit that makes the cheese, it is the cheese that creates its environment” by fermenting the pit long before 100 days.
