This particular maturation gives the pecorino cheese a strong taste, never the same, but accompanied by a sweet vinous, sour smell, but with a particular softness of the internal dough, even with products matured for more than 6 months.

The cheese is placed under the pomace, which gives the shape a sweet and delicate flavor, also based on the type of grape with which they were made.

Slice of about 350 g, vacuum packed.

Ingredients: pasteurized sheep’s milk, salt, rennet, enzymes, aromatic herbs.
