Shape: cylindrical with flat faces even if slightly convex due to the seasoning and straight side and rounded edge

Outside: the rind is hard, wrinkled and slightly greasy, due to the rind treatment, dark amber, light brown with the presence of darker patches.

Inside: The paste is hard and compact, straw-colored, with a darker colored medium nail and the holes are present in a homogeneous and evenly distributed way.

Smell: a characteristic Ircino animal even if not too pronounced, lactic of cooked butter and hay vegetable.

Flavor: medium-high sweet, but then the medium salty comes out which becomes spicy with increasing aging, in the mouth it is grainy, but overall quite soluble, has a high persistence. There is a slight acidity but that overall makes it pleasant and balanced.
