Fagiolina is a native bean of the area of the Lake Trasimeno basin where, thanks to the presence of humid soils and favorable climatic conditions, it was already cultivated by the Etruscans and Romans. It is a specialty that has been part of the slow food principals since 2000.
Cultivation is long, tiring and still entirely manual: from sowing to harvesting to threshing. Furthermore, the maturation is gradual: the beans must be harvested every day for a couple of weeks. The seedlings are placed in the yard, dried and beaten with forks and sticks. Then, with the sieves the seeds are separated and stuffed.
Its delicate and sweet flavor, thin skin and fine-grained pulp make it a unique product of its kind.
