Finocchiona PGI is a pork sausage flavored with fennel, typical of the Tuscan tradition and strongly rooted in the gastronomic culture of the area. The slice has a mixture with fat particles distributed in such a way as to wrap the muscle fractions leaving the product soft even after long curing times; when cut it is characterized by a penetrating smell of fennel. It lends itself to being eaten as an appetizer, accompanied by Pane Toscano, ie without salt, and a good red wine.
