This cheese comes from an ancient tradition, since in times of war the most precious goods were hidden in caves or pits dug in the ground. Once the danger was over, the cheese was taken out and being far more fragrant and better preserved than the one left out, it was decided to repeat the same conservation. This is how this unmistakable pecorino was born.
Ingredients: sheep’s milk, rennet, salt, enzymes, aromatic herbs.
