The classic Norcia salami is a rustic salami, well spiced and tasty, with a strong taste, produced with various cuts of pork, lean shoulder, thigh trimmings and bacon. The grinding is carried out with medium dies thus obtaining a medium-grained salami. The flavor is enhanced by the spices of the pork butchery tradition, salt, ground pepper and whole grains and garlic pounded in white wine. The product is stuffed into natural casing and tied entirely by hand, as only master butchers can do. After the bagging phase, it is left to dry for a few days with the heat of a real fireplace, which gives it a light smoky taste. It is then transferred to the cellar for the maturation phase which lasts an average of 3-4 months. Here time and the healthy air of our places do the rest.

Excellent to be enjoyed both as an appetizer and as an aperitif accompanied by a good dry white wine.
