It is difficult to explain what a plate of pici with Chianina ragù is for a Tuscan peasant, let’s try it this way: the church bells ringing in celebration, the people who go out into the street and find themselves in the town square after a week of hard work. work, children running behind a balloon at the village park. The pici are the family gathered around a table, it is the joy of finding oneself without haste, with the only pleasure of being there. I know they seem like scenes from past times, no longer current, yet in our countries it is still like this. Time has stopped or in any case flows much slower, and the food we bring to our tables still smells like it once was.
