The aged in Barrique are born from a widespread research carried out among the old shepherds of the Valdichiana, masters in the preservation of cheese with poor materials such as walnut leaves, straw and hay, wheat, bran, ash, olive leaves, marc, chestnut leaves and many others. Each product has its own identity which is characterized by the materials in which it is aged, giving the cheese a unique flavor and aroma.
The wheels are placed in oak barriques and kept at room temperature; the shapes inside are laid in layers together with the material in which they are seasoned. The small gaps between the boards of the barrels allow air to gently penetrate inside and create a perfect microclimate for the cheese to ripen.
When the forms reach the perfect seasoning they are placed in crates. They have an irregular shape but the aroma and intensity of taste makes each cheese unique in its kind.
Ingredients: pasteurized sheep’s milk, salt, rennet, ferments. Crust treated with sunflower oil and straw.
