Shape: cylindrical and slightly convex side of 12 cm in height and flat faces of 18-20 cm on each side.

Outside: the rind is very hard and takes on a typical brown color with darker and irregular spots that vary according to the seasoning and the typical treatment it has undergone in the rind.

Inside: it has a hard and compact but crumbly and slightly open texture, straw yellow in color with a nail of almost one centimeter.

Smell: the nose is intense, with notes of cooked butter and vegetables such as toasted dried fruit, and an animal scent (clean fleece) of medium intensity.

Taste: it is intense, slightly spicy, which accentuates with aging, but very pleasant and appetizing.

Il Grottone is a pecorino with an entirely Tuscan short supply chain. The paste is straw yellow in color, with small scattered holes. The taste is pleasantly sweet with a persistent and pleasant but never spicy aftertaste.
