Typical of the Umbrian-Tuscan tradition; young boar meat is used, which after being left to rest in a mixture of salt and aromatic herbs, is left in the cellar for a slow aging. The meat is compact, dark red in color, with an intense and very aromatic taste, with a strong scent of game.
