Wild Breeded Pork Capocollo 500/550 g

Capocollo obtained from pigs raised in the wild in a sustainable and ethical way. This type of breeding has as a direct consequence products of the highest quality. The capocollo consisting of the part of the pig’s neck, from the nape to the fifth rib, after being massaged with a mixture of salt, pepper, vinegar and crushed garlic, is salted and left to mature. The color is red with rosy patches of fat, with an intense flavor on which the garlic stands out.

Being a micro farm, which raises a small amount of animals, the availability of the products is very limited. The goal is to go back to raising animals “as it once was” in an ethical and sustainable way, focusing on the well-being of the animal while respecting the environment in which it lives. This type of farming results in products of the highest quality. The animal is raised in the wild and mainly acorn-fed, no antibiotics or GMOs are used, the animal therefore follows its natural and slow pace of growth.
