The Tuscan salami is a typical salami of the Tuscan tradition, known and appreciated throughout Italy. It is a sausage with a delicate and savory taste.
It is obtained from the processing of some parts of the pig, in particular the lean part is obtained from the thighs and shoulders, while the fat part is obtained from the back of the pig. The seasoning takes place in special rooms, with a temperature that varies between 10 and 12 degrees, and lasts about 5 months.
